Can’t figure out the perfect Father’s day gift? Try something new and creative, and wake up dad’s tastebuds with this mediterranean breakfast. This Shakshuka recipe won’t only spice up dad’s morning but is full of healthy vegetables and protein.

Ingredients:
1 tablespoon extra-virgin olive oil – igourmet $1.38 Cashback & 1.38 IBV
2 cloves garlic, minced
1 onion, cut into 2 inch pieces
1 green bell pepper, cut into 2 inch pieces
1 (28 ounce) can whole peeled plum tomatoes with juice – Walmart
1 teaspoon paprika – Walmart
4 eggs
4 (6 inch) pita bread (optional)
Portobella mushrooms, chopped
1 bunch Scallions, chopped
Directions:
In a deep skillet, heat olive oil over medium heat. Add minced garlic, chopped onion and bell pepper. Cook for 5 minutes, then add mushrooms. Once cooked, add the canned whole tomatoes, sprinkle with the paprika stir, add salt and pepper. Let simmer.
Crack eggs, spreading evenly over pan with tomato mixture. Cover, and cook until the eggs whites, 2 1/2 to 3 minutes. Serve hot! Sprinkle with chopped scallions.
